What do you do when you’re not working?
When he’s not working, Elios is passionate about cooking and recipe development, which led him to create CookingTherapy.net, a recipe website where he shares his culinary creations and cooking tips. He finds cooking both therapeutic and creative, allowing him to experiment with flavors and connect with his Greek heritage through traditional recipes. Elios is also deeply interested in emerging technologies, particularly AI tools and cryptocurrency markets, where he enjoys staying current with industry developments and exploring new platforms. In addition, he devotes time to researching and planning future business ventures, as entrepreneurship has always been a driving force in his life. Whether perfecting a new ice cream flavor for his company or exploring investment opportunities, Elios is always seeking ways to learn, grow, and create something meaningful.

If you were to look back from the age of 80 and tell yourself anything what would it be?
Looking back from 80, I would tell myself to embrace every challenge as an opportunity for growth and never be afraid to pivot when new possibilities arise. I’d remind myself that the diverse experiences I’m gathering now, from legal work to restaurant management to entrepreneurship, aren’t detours from my path but rather building blocks that will make me a more well-rounded and capable professional. I’d also say to trust my instincts when it comes to taking calculated risks, whether that’s starting a business, changing career directions, or pursuing law school. Most importantly, I’d tell myself to remember that success isn’t just measured in professional achievements, but in the positive impact you have on others and the meaningful relationships you build along the way.

What are two things on your bucket list?
1. Complete law school and become an attorney specializing in technology and legal compliance, focusing on cryptocurrency regulation and AI governance.
2. Open a Greek-inspired restaurant or ice cream shop in Greece, combining heritage, entrepreneurship, and a passion for food experiences.

Elios is a seasoned legal professional with over nine years of paralegal experience spanning multiple practice areas including matrimonial law, estate planning, and real estate matters. Elios brings a unique blend of legal expertise and entrepreneurial spirit to his work. He holds a Bachelor of Arts in History/International Relations from The College of New Jersey and is a licensed Notary Public in New Jersey. Beyond his legal career, Elios is the founder of Greek Cream, LLC, an award-winning ice cream company that was voted “Best Ice Cream in New Jersey” by OnlyInYourState. His diverse background also includes successful restaurant management, where he led the launch of multiple locations and earned recognition as “best restaurant in Lambertville, New Jersey” by NJ.com. Elios is multilingual, speaking Greek, Spanish, and Albanian, and is currently pursuing his real estate license while preparing for law school.
